Make-Ahead Barbecued Meatballs

These are great for parties or a week night meal.They can be eaten by themselves or as a sandwich.

To make the meat balls you combine all the ingredients (mixture will be soft) and shape into walnut-sized balls. Arrange meatballs in a single layer on waxed paper lined cookie sheets. Freeze until solid. Store frozen meatballs in freezer bags until ready to cook.

3-lbs ground beef
12-oz can evaporated milk
1-Cup uncooked oats
1-Cup cracker crumbs
1/2 Cup chopped onions
1/2 tsp garlic powder
2-tsp salt or less
1/2-tsp pepper
2-tsp chili powder

Remove meatballs from freezer and prepare sauce by mixing together

2-Cups Ketchup
1-Cup brown sugar
1/2 tsp liquid smoke
1/2 tsp garlic powder
1/4 cup chopped onion
Stir until sugar dissolves.
Place 20-30 frozen  meatballs in a 9x13 baking pan. Pour sauce over meatballs. Bake at 350 for 1 hour
*Note-I freeze 15-20 meatballs into each freezer bag. One bag is enough for dinner and leftovers for lunch the next day. If only making one bag of meatballs I half the sauce mixture.

Strawberry Pretzel Dessert

Strawberry Pretzel Dessert

Layer 1
2-Cups crushed pretzels
3-T Sugar
1 1/2 sticks margarine, melted

Layer 2
1-8oz pkg cream cheese, softened
7/8 cup sugar
1-9oz container cool whip

2-3oz pkgs strawberry jello
2-Cups boiling water
1-9oz pkg frozen strawberries

Melt margarine and mix together with sugar and pretzels. Press into 9x13 pan. Bake at 350 for 10 minutes. Cool. Cream sugar and cream cheese together and stir in cool whip for the second layer. When blended, spread over cooled pretzel crust. Place in refrigerator until mixture is firm. Dissolve jello in boiling water and add strawberries. Chill. When jello starts to thicken, pour over cream cheese mixture. Chill overnight. Cut into squares and garnish with whipped cream and a fresh berry if you so desire.
