Pasta Salad

Pasta Salad

1 box tri-color spiral pasta
1-bag of mini pepperonis
1-Bag of Kraft cheese crumbles
Cherry tomato's-left whole or cut smaller to your preference
1-bottle Italian-style salad dressing-I just add enough till its to my desired taste
Black olives-optional

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss cooled pasta with cheese, pepperoni, vegetables &  Italian-style dressing to taste. I like to let it set for a few hrs or over night before i serve it, to give it time for the flavors to infuse.

French Cake the best Strawberry Shortcake

French Cake-Strawberry Shortcake

1/2 Cup melted butter
1-tsp real vanilla
3-tsp baking powder
2-Cup sugar
1/4 tsp salt
2 1/4-Cup flour
1-Cup milk 

Preheat oven to 350 degrees. Mix melted butter, eggs and vanilla. Then add baking powder, sugar, salt and flour, mix well. Finally add 1 c milk, again mix well. Pour into a greased 9x13 cake pan. Bake for 30-35 minutes.
**Serve with fresh sliced strawberries or top cake with your favorite chocolate icing.

I baked mine in cupcake size mini bunt pan for about 8-13 min. for individual servings.This is a really old recipe and when you bake it in a 9x13 pan the top gets a yummy sugar crust!!

Happy Fathers Day-Grilled BBQ Chicken

Need a dinner idea for that special Dad in your life?!?!? Here is a great chicken recipe he will love!!

Grilled BBQ Chicken

3-4 Chicken Breast
Italian Dressing
BBQ Sauce-I used Sweet Baby Rays Honey BBQ
6-7 Green Onions
Shredded Cheese of your choice (I used a 3 Cheddar Blend)

Marinate the chicken in italian dressing for at least 4 hours (can leave in overnight as well).
Then put onto grill and cook until almost done.
Brush with BBQ sauce, and then top with some cheese, green onions & tomatoes.
Top with extra cheese to make everything 'stick' to the chicken.
Turn grill to low heat, put lid on grill and let sit for approximately 3-5 min.
Serve with rice or pasta.
We had ours with pasta and baked beans.

You Must..........Try the new Philadelphia Cooking Creme

You must try the new Philadelphia Cooking Creme-Italian Cheese & Herb, We have only used this one so far but we love it!  I think there are 4 different flavors. The recipe is on the back of the container but I'll still put it on here for you.

Chicken Primavera with Pasta

1-lb boneless skinless chicken breast, cut into bite-size pieces
2-Cups frozen stir-fry vegetables (broccoli, carrots, red pepper, snow peas)
1- Tub (10 oz) Philadelphia Italian Cheese & Herb Cooking Creme
2-Cups hot cooked fettuccine 

Cook and stir chicken in a nonstick skillet on medium heat 5 to 7 min. or until done. Add vegetables; cook 2 to 3 min. or until heated through, stirring occasionally.
Add cooking creme; cook and stir 3 min.
Stir in pasta.

Bloomin Onion Bread

I made this for Superbowl this year and it was really good, but forgot to take a picture till it was half gone and to be honest the picture is terrible but for an idea of what this looks like here you go!!

Bloomin Onion Bread

1 unsliced loaf (round is preferable) sourdough bread.
1 pound Monterey Jack cheese, thinly sliced-Personally I would use more cheese because you can never have to much cheese!!!
1/2 cup butter, melted
1/2 cup finely diced green onion, with tops
2-3 tsp poppy seeds-Next time I would use 1-2 tsp of poppy seeds (just my personal opinion)
Cut the bread lengthwise and widthwise - without cutting through the bottom crust. Place on a foil-lined baking sheet.

Insert cheese between cuts. Combine butter, onion, and poppy seeds. Drizzle over bread. Wrap in foil; place on a baking sheet. Bake at 350 degrees for 15 minutes. Unwrap. Bake 10 more minutes, or until cheese is melted.

Homemade Funfetti Cupcakes!!!

Homemade Funfetti Cupcakes
Makes 12 cupcakes
1/2 cup butter
3/4 cup sugar
2 eggs
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1/3 cup milk
1/3 cup assorted brightly colored sprinkles + more for top of frosting

After you mix all the ingredients Fold in sprinkles

Fill Cupcake wrappers 2/3 full

Preheat oven to 350 degrees F.
Cream butter and sugar in the bowl of an electric mixer until fluffy, about 3 minutes. Add eggs and vanilla and beat until combined.
Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Fold in assorted sprinkles.
Pour into cupcake tins and fill 2/3 of the way full. Bake for 18-20 minutes. Let cool, then frost. (I baked them for about 15 min)
Let cupcakes cool then icing with Vanilla Buttercream

Vanilla Buttercream
2 sticks of butter, softened
2 1/2 cups powdered sugar
1 tablespoon vanilla extract
1 tablespoon of milk, if needed
Cream butter in the bowl of an electric mixture until completely smooth and creamy. With the mixer on low speed, add in powdered sugar slowly. Gradually increase mixer speed and add vanilla, then beat for 2-3 minutes, scraping down sides and bottom of the bowl. If frosting is too thick, add milk 1 teaspoon at a time until desired consistency is reached. Frost cupcakes and top with sprinkles.

Mix until smooth and creamy

Memorial Day & Coming Soon.........

I hope you all had a great Holiday weekend with your family and friends. God Bless America and Thanks again to all the past, present and future service men and women!! My Grandfather was a WWII Veteran and he recently passed away this past February. There was a memorial day service over his grave that we were able to be a part of. Very touching and special to our family here are a few photos ....
